We love a sweet drink in our house, but sometimes I want to mix it up and do something a little more “fresh.” Enter this fruity kiwi cucumber spritzer. It’s tart, it’s crisp, it’s herbaceous. It’s a green juice drink that tastes like a spring tonic in all the best ways.

How to Make Kiwi Cucumber Spritzers
This is going to start off controversial, but you don’t need to peel your kiwi. I promise we’re going to filter out any larger skin pieces! Add the kiwi pieces, cucumber pieces and pineapple pieces to a high-powered blender like a Vitamix.
Start blending, using the plunger if needed to get things moving around. Add a little water if you need to. Continue blending on high for 30 seconds until the mixture is smooth.
Pour the fruit mixture into a bowl topped with sieve. Use a ladle spoon to push the liquids through for a minute or so.
In a cocktail shaker, add a cup of ice, a quarter cup of the fruit puree, and a half cup of soda (I used Fever Tree Sparkling Cucumber). Shake carefully a couple of times, popping the lid every shake to release pressure. Gentle shaking doesn’t reduce the fizz too much.

Shop the Kitchen
To serve, pour about 6 ounces into a glass, topping it off with a couple more splashes of cucumber soda. Squeeze a lime wedge into the cup and garnish with some fresh mint. Enjoy like you’re on vacation!
Optional Variations
If you want a fruitier, sweeter drink, substitute cucumber soda for Sprite or ginger ale. You could also use a pineapple soda, but if you’re using a sugar-free one like Spindrift, you may want to add some simple syrup.
